I'll bet if you wrote to the show, you'd have a good chance of the web intern getting the question to Shaffer's agent. That said, I wouldn't assume it's him... I recently came across a SS album where someone named James Levine was credited, but after some research I figured out it couldn't have been the conductor of the Boston Symphony who appeared in Fantasia 2000.
