The holiday gives working people, rabbits and others a chance to let birds of all kinds accompany them to work. The birds get a taste of the working life and see what they might want to chose are their future careers.
In the song, the cast sings about the different birds they have joining them and what they'll be teaching them. For example, Ruthie brings a turkey to Finders Keepers and Gordon brings Big Bird to his high school classroom. Hoots the Owl points out he's already a working bird, so he's bringing himself to work.
